In 2024, the market expanded sharply to 30 594 t, a 34% increase from the previous year. This surge was primarily driven by strong consumer demand for health-conscious and ethnic products. Approximately 45% of new product launches featured organic, natural, low-sodium, or sugar-free formulations, while sauces inspired by Latin American, Asian, and Mediterranean cuisines gained popularity. Simultaneously, the rapid growth of dips and spreads, fueled by the rising snack culture and demand for convenient, ready-to-eat foods, contributed significantly to the overall market expansion.

The maximum volume was recorded in 2019 at 47 565 tonnes, with the largest increase of 8.1% also occurring that year.
