The market for prepared baking powders in Portugal began the period supported by established national suppliers and the entry of new entrepreneurs into the personalized cake segment, such as Daju Cakes in 2019. However, by 2020, market volume had declined to 3 769 tonnes from 4 055 tonnes in 2019, a period coinciding with the COVID-19 pandemic which accelerated a shift toward online orders and home delivery for bakery products.
