From 2018 to 2020, the poultry meat and offal market in Chile contracted from 1 544 thousand tons to 1 506 thousand tons. This decline coincided with growing external demand for Chilean meat, which boosted exports, and ongoing consolidation of the domestic poultry industry, where a few integrated producers strengthened their market share. During 2020, consumer preferences increasingly shifted toward ready-to-eat and frozen protein-based products, encouraging the adoption of refrigeration and freezing preservation methods.

The market stabilized in 2021 and grew to 1 529 thousand tons in 2022, supported by a continued consumer preference for frozen meat due to its convenience in storage and nutrient retention. Concurrently, Chile secured important export opportunities, including the reopening of the Chinese market for poultry meat after the avian influenza crisis and the signing of an Advanced Framework Agreement with the European Union, which improved trade conditions for meat products.

In 2023, the market volume dropped sharply to 1 448 thousand tons, primarily due to an avian influenza outbreak that reduced turkey production and slaughter. Despite this, poultry exports continued, with significant shipments to China. The industry has since focused on consolidating its export achievements, with over 50 active markets, and reinforcing national biosecurity systems.

From 2018 to 2021, the United States, China, and Mexico were the primary destinations for Chile's poultry meat and offal exports by volume.
