From 2018 to 2020, the poultry fat market volume in Eastern Europe grew from 61.6 thousand tons to 83.7 thousand tons. This increase was driven by the expansion of capacities at major poultry farms and the launch of duck meat production at new facilities. Sanctions and external economic restrictions further stimulated domestic poultry meat output, raising the supply of fat as a by-product.

In 2021, the market contracted to 73.5 thousand tons despite stable production, as increased exports of poultry meat, including turkey, diverted more fat abroad. By 2022, market volume recovered to 83.6 thousand tons due to further capacity growth and the introduction of a GOST standard limiting fat content in chicken legs to no more than 20% of weight, which likely increased separate fat availability. However, in 2023 the market fell sharply to 63.8 thousand tons as production declined and exports of poultry fat surged, supported by rising international shipments of poultry meat.

In 2024, exports of poultry fat continued to rise, reaching 69.1 thousand tons, while imports were 20.7 thousand tons. Reductions in poultry meat production during some months of 2024 affected the market, maintaining the trend of growing exports.
