The Bolivian pig offal market expanded gradually from 2018 to 2021, with production rising from 3 694 t to 3 936 t and total market volume growing from 3 778 t to 3 959 t. This period established a base for more significant changes that followed.

A notable acceleration occurred in 2022 when production increased by over 6% to 4 156 t and the market volume reached 4 199 t. This growth was propelled by a reported 15% expansion of the national pork sector, driven by improved production techniques and stronger domestic demand, particularly in the Santa Cruz region which dominates national output. Simultaneously, authorities actively sought to open the Chinese market for pork and bovine offal, creating new export potential despite high animal feed costs impacting producer margins.

Production continued to rise in 2023, reaching 4 338 t, though total market volume contracted slightly to 4 059 t as exports tripled. The industry maintained a 4.0% production growth, supported by efforts to guarantee supply and a sustained focus on accessing international markets in China, Chile, and Brazil. Domestic challenges included smuggling to Peru and price speculation. Entering 2024, the government approved subsidies via the state-owned company EMAPA to stabilize the internal market for agricultural products, including meat, aligning with a broader national strategy of import substitution and export market diversification.
