The Mexican market for fresh onions and shallots experienced significant fluctuations between 2018 and 2023. In 2020, increased global demand for onions led to higher exports, which reduced domestic availability and brought market volume down to 930 thousand tons. The following year, Mexico's relative export advantage weakened due to rising production in Peru, causing exports to fall and boosting domestic market size to 1 144 thousand tons.

From 2022 onward, the market expanded steadily, reaching 1 438 thousand tons in 2023. This growth was driven by a combination of factors including overproduction in North America, which increased Mexican harvests, and rising domestic demand for fresh vegetables as part of healthier diets.
