The market for not further prepared dried vegetables in Afghanistan expanded significantly from 3 044 t in 2018 to 6 666 t by 2020. This growth was supported by export promotion initiatives, including Afghan companies showcasing products at an international food exhibition in Kazakhstan and efforts to establish a dedicated air corridor for shipments. At the same time, a Ministry of Agriculture project trained women farmers and distributed vegetable seeds, boosting domestic production.

After the 2020 peak, the market contracted to 3 815 t in 2021. The severe drought reported in 2019 had likely reduced water availability and harvest yields, while a noted decline in the traditional household practice of drying vegetables also affected demand. In 2022, the market volume partially recovered to 4 564 t, aided by government investments in irrigation infrastructure and improved seed access, though increased imports played a major role in this rebound.

The market volume eased further to 3 954 t in 2023, with imports remaining substantial at 954 t.
