The market for not further prepared dried vegetables in Lebanon experienced considerable fluctuations between 2018 and 2023. It grew to 4 348 t in 2019, then contracted over the next two years, falling to 3 571 t in 2020 and 3 379 t in 2021.

A recovery occurred in 2022 as the market volume increased by 15% to 3 886 t. This expansion was driven by the entry of a new domestic producer, which installed specialized drying machinery to manufacture and distribute dried vegetables through retail networks nationwide, bolstering local supply. The market then stabilized at 3 765 t in 2023.

Between 2017 and 2020, production fell by 23.2%, which translates to an annualized decrease of 8.4%. The largest drop occurred in 2018, at 22.0%, while the biggest increase was seen in 2019, with a rise of 8.4%.

Exports reached their lowest point in 2018 at 65 tonnes, then surged to a peak of 278 tonnes in 2020, representing a 4.3-fold increase between these years. In 2020, exports grew by 329.1% year-on-year. The sharpest decline was recorded in 2018, falling by 35.9%.

From 2017 to 2020, Kuwait, the United States, and Germany were the primary markets for Lebanon's exports in kind, accounting for 31.4%, 13.2%, and 7.1% of total flows, respectively. Together, these three countries represented 51.7% of all exports.

The data shows irregular fluctuations, pointing to a volatile market environment. Exports in value terms hit their lowest in 2019 at 284 thousand US dollars, then climbed to 533 thousand US dollars in 2020, a 1.9-fold increase between these years. In 2020, this represented an 87.5% rise compared to the previous year. The most significant decline occurred in 2018, dropping by 39.0%.

Between 2017 and 2020, Lebanon's exports in value terms were spread across a diverse range of partner countries. The United States, Germany, and Sweden were the top contributors, accounting for 14.6%, 10.8%, and 7.8% of total flows, respectively. Lebanon imported approximately 898 tonnes of not further prepared dried vegetables in 2020, reflecting a substantial contraction of 23.1% compared to the previous year. Over the period from 2017 to 2020, imports increased by 14.6%, with a compound annual growth rate of 4.7%. The lowest volume was recorded in 2018 at 715 tonnes, while the peak occurred in 2019 at 1 168 tonnes. The largest increase was in 2019, jumping by 63.3%.

Between 2017 and 2020, Egypt was the principal source for Lebanon's imports of not further prepared dried vegetables in value terms, representing 70.4% of total flows. Other destinations contributed to a less significant portion of imports.
