The market for not defatted cocoa paste in Honduras saw a sharp decline in 2019, with volume falling to 261 tons, before entering a period of sustained growth through 2023. This recovery was primarily driven by rising international demand for fine and aromatic cocoa, which increased prices and made production more profitable for local growers.

Genetic improvement programs, including the establishment of genetic banks and local nurseries since 2019, enhanced bean quality and yield. This was coupled with strengthened sector governance through the National Cocoa Chain Committee and support from international cooperation, which together improved market access and coordination among producers, cooperatives, and private companies.

The growth was further supported by the expansion of local processing, with around 70 companies transforming beans into paste and finished products, adding value within the country. The successful entry of Honduran chocolate brands into international markets from 2018 onward also stimulated the upstream market for cocoa paste, despite ongoing challenges such as labor migration and inflationary cost pressures.
