From 2018, the production and market volume of mushrooms and truffles in Asia began a consistent upward trajectory. This growth was initiated by industry-wide cooperation between breeders, farmers, processors, and exporters, focusing on developing new, consumer-oriented varieties like the golden enoki 'Aram' and the 'Baekmaru24' oyster mushroom. The strategic shift from fresh mushrooms to a broader range of processed products, such as protein teas and organic mushroom teas, created new market segments and added value, supporting the expansion in both output and market size.

The growth was further sustained by active efforts to diversify export markets and strengthen international competitiveness. Starting with trial exports to Vietnam, Australia, and the United States in 2018, the industry successfully introduced exotic mushroom varieties and processed goods abroad. By 2019, high satisfaction rates for freshness and quality among Vietnamese consumers were recorded, and secondary exports of processed items like organic mushroom tea to the U.S. were achieved. This export drive, managed in collaboration with the Rural Development Administration, helped stabilize supply chains and opened new revenue streams, contributing to the steady increase in domestic production capacity.

In the latter part of the period, from 2021 onwards, the market's expansion was reinforced by a strong focus on health-conscious consumers and functional products. The development of dietary fiber-enhanced varieties and the continued expansion of processed mushroom products catered to growing wellness trends. The formal pursuit of strategies for new product discovery, customized breeding, and export market diversification by the Rural Development Administration in 2023, including the export of thousands of kilograms of new varieties to Europe and Vietnam, directly supported production growth and enhanced the industry's overall value.
