The market volume then fell sharply in 2021, dropping to 1.9 million tonnes, which was less than half the volume recorded just two years prior.

A recovery phase began in 2022, with market volume increasing steadily through 2023 and 2024. By 2024, the market reached 2.7 million tonnes, though it remained below the levels seen in 2018 and 2019. In value terms, the market followed a similar path, falling to $1.3 billion in 2021 before climbing back to $2.3 billion by 2024.

Following a two-year decline, Italy's exports of milk with a fat content between 1% and 6% rebounded in 2020, reaching 44 thousand tonnes—a 6.5% increase compared to 2019. However, over the 2017-2020 period, exports decreased by 33.9%, equating to an annualized rate of 12.9%. The lowest point was in 2019 at 41 thousand tonnes, with the sharpest drop occurring in 2018 at 29.6%.

From 2017 to 2020, Libya, Albania, and China were the leading destinations for Italy's exports of milk with a fat content between 1% and 6%, accounting for 54.2%, 8.3%, and 7.5% of total exports in kind, respectively. Together, these three countries represented 70.0% of all export flows.

The minimum value was recorded in 2019 at $30.6 million, while the largest decline occurred in 2018 at 22.9%.
