The Spanish market for lard stearin, lard oil, oleostearin, oleo-oil and tallow oil saw a sharp expansion in 2019, with volume rising to 5 821 t, but then entered a prolonged phase of contraction that brought it down to 4 515 t by 2023.

From 2022, the market's decline was driven by the robust growth of plant-based food alternatives and increasing consumer health awareness, which reduced demand for animal fats. This trend was reinforced by persistent environmental scrutiny shifting preferences toward vegetable-based fats.

Countering the drop in domestic consumption, production was supported by rising demand for tallow as a sustainable feedstock in biofuel production and its growing use in the oleochemical sector for products like fatty acids and personal care ingredients.

Spain's production of lard stearin, lard oil, oleostearin, oleo-oil, and tallow oil grew for the third year in a row in 2020, reaching 4 969 tonnes. This marked a 25.2% increase compared to the previous year. Over the 2017-2020 period, production rose by 36.8%, with an average annual growth rate of 11.0%.

In 2019, exports hit their lowest point at 96 tonnes, but surged to 187 tonnes in 2020, a 94.3% jump from the previous year. The peak was recorded in 2018 at 1 878 tonnes, resulting in a 19-fold difference between the high in 2018 and the low in 2019. The sharpest decline occurred in 2019, dropping by 94.9%.
