Between 2018 and 2024, Spain experienced a steady rise in imports of inactive yeasts and dead micro-organisms, from 4 692 t to 10 366 t. Exports also grew overall, reaching 6 090 t in 2024, though with annual variations. Domestic production, available from 2021, contracted from 4 780 t to 3 905 t over four years.

As a result, the total market volume expanded from 6 932 t in 2021 to 8 181 t in 2024. The growth was driven largely by higher imports, which compensated for lower local output. In 2024, a reported 24.4% increase in imports between October 2023 and October 2024 supplied the market further, while growing interest in novel yeast applications in food biotechnology and probiotics bolstered demand.

The regulatory landscape evolved with the adoption of EU Regulation 2024/2895 in December 2024, updating Listeria monocytogenes safety criteria for food products, including those containing yeasts. Producers must adapt by July 2026, reinforcing focus on microbiological control.

Spain's cross-border shipments of inactive yeasts and dead microorganisms have increased for the third consecutive year. In 2020, Spain exported 5 496 tonnes of these products, marking an 18.1% rise compared to 2019. Over the period from 2017 to 2020, exports grew by 58%, with a compound annual growth rate of 16.5%.

From 2017 to 2020, the principal destinations for Spain's exports in kind were France, accounting for 26.3% of the total, the Netherlands with 25.9%, and Belgium at 12.2%. Together, these three countries represented 64.4% of all export flows.

The value of Spain's exports of inactive yeasts and dead microorganisms has risen for the third year in a row. In 2020, exports reached 19 560 thousand US dollars, up by 18.3% from 2019. Between 2017 and 2020, export value increased by 78.5%, with a compound annual growth rate of 21.3%.

During 2017–2020, the largest contributors to Spain's export value were France, which accounted for 33.1% of the total, Chile at 12.8%, and the Netherlands with 9.8%. Combined, these three markets made up 55.7% of all export flows in value terms.

Spain's imports of inactive yeasts and dead microorganisms have grown for the second consecutive year. In 2020, import volume totaled 6 670 tonnes, reflecting an 8.8% increase compared to 2019. Between 2017 and 2020, imports rose by 12.7%, equating to an annualized growth rate of 4.1%. The lowest import volume was recorded in 2018 at 4 692 tonnes, which saw the largest decline of 20.7%. In contrast, 2019 experienced the largest increase of 30.7%.

From 2017 to 2020, the core group of markets for Spain's imports in kind consisted of France, representing 34.9% of the total, Brazil at 15.1%, and Poland with 12.4%. Together, these three countries accounted for 62.4% of all import flows.
