The Peruvian globe artichoke market began the period with strong production of 154.6 thousand tons in 2018, supported by industry consolidation around spineless varieties and access to new technologies that improved competitiveness. Peru solidified its position as a top global exporter, diversifying into European and American markets following the lifting of phytosanitary restrictions. Although output dipped to 131.2 thousand tons in 2019, the country emerged as the world's fourth-largest fresh artichoke producer, with companies investing in more elaborate processed forms like creams and sauces for export.

Production fell sharply to 82.1 thousand tons in 2020, then partially recovered to 99.5 thousand tons in 2021. By 2022, market volume stood at 89.5 thousand tons, a year in which climate-related issues affected harvest homogeneity in competing countries and boosted demand for processed artichokes. Peruvian exporters capitalized on this, shipping 51,140 tons worth $139 million, with canned artichoke exports rising by over 35% in volume.

The market rebounded strongly in 2023, with production reaching 136.7 thousand tons and market volume 136.6 thousand tons. This recovery was driven by continued global climate challenges that impacted harvests elsewhere, strengthening Peru's competitive position. Simultaneously, the frozen and canned artichoke segment grew, fueled by consumer interest in healthy snacks and year-round availability.
