In 2022, market volume dropped to 4 712 tonnes, a 9% decrease from the previous year. The following year saw a sharp recovery to 5 726 tonnes, largely driven by imports from Germany, which exported 4 500 tonnes of gingerbread to Austria in 2023. This influx of supply directly expanded the available market volume.

By 2024, the market volume slightly eased to 5 687 tonnes, while the market value continued its upward trend, reaching 44.5 million US dollars. This suggests that consumers were paying higher prices for gingerbread products, even as volume stabilized.
