Between 2018 and 2023, the Austrian fresh garlic market volume showed variability, starting at 5.1 thousand tons in 2018. It dipped slightly the following year before recovering to 5.3 thousand tons in 2020 and 2021. A significant expansion occurred in 2022, with the market reaching 5.8 thousand tons, but it then contracted to 5.3 thousand tons in 2023. Throughout this period, domestic production grew steadily from 1.1 thousand tons to 1.6 thousand tons.

The regulatory landscape for the market evolved in 2024 with the implementation of new EU rules. From February 6, updated import controls for foods of non-animal origin (Regulation (EU) 2024/286) came into force. Furthermore, the new EU General Product Safety Regulation (GPSR) will apply from December 13, introducing stricter safety obligations for economic operators. These changes coincided with continued consumer trends favoring organic, healthy, and convenient food options.

Austria's garlic production has grown for the third consecutive year. In 2020, the country produced 1 320 tons of garlic, marking a 9.1% increase compared to 2019. Looking at the period from 2017 to 2020, production rose by 21%, which translates to an average annual growth rate of 6.6%.

Following a two-year decline, Austria's garlic production value rebounded. In 2020, the output was valued at 5 095 thousand US dollars, showing a significant increase of 32.7% compared to the previous year. Over the 2017-2020 period, production value grew by 12.6%, equivalent to an annualized rate of 4.0%. The lowest value was recorded in 2019 at 3 841 thousand US dollars, which also saw the largest decline of 11.2%.

In 2020, Austria exported 383 tons of garlic, representing a substantial decrease of 20.5% compared to the previous year. From 2017 to 2020, exports fell by 4.2%, with a compound annual growth rate of -1.4%. The lowest export volume was in 2018 at 382 tons, while the peak was in 2019 at 482 tons, which also experienced the largest increase of 26.3%.

Between 2017 and 2020, Hungary, Slovenia, and Italy consistently led as the top destinations for Austria's garlic exports in volume terms. Hungary accounted for 28.3% of exports, Slovenia for 24.6%, and Italy for 16.8%, together making up 69.6% of total export flows.

Austria's garlic exports in value terms reached 1 479 thousand US dollars in 2020, reflecting a moderate decline of 3.3% compared to the prior year. Over the 2017-2020 period, exports decreased by 10.9%, with an annualized rate of -3.8%. The lowest value was recorded in 2018 at 1 473 thousand US dollars, which also saw the largest decline of 11.2%. In contrast, 2019 experienced the largest increase of 3.8%.

However, over the 2017-2020 period, imports decreased by 4%, with an annualized rate of -1.4%. The lowest volume was in 2019 at 4 309 tons, while the largest decline occurred in 2018 at 4.4%.

During 2017-2020, Spain, China, and Italy were consistently the main sources for Austria's garlic imports in volume terms. Spain contributed 43.4% of imports, China 29.5%, and Italy 16.2%, together representing 89.1% of total import flows.

Despite this recent growth, over the 2017-2020 period, import value decreased by 8.7%, with a compound annual growth rate of -3.0%. The lowest value was recorded in 2018 at 12 255 thousand US dollars, which also saw the largest decline of 24.4%.
