After a decline to 166 thousand tons in 2019, output recovered to a peak of 190 thousand tons in 2021 before gradually decreasing to 172 thousand tons in 2023.

Supply constraints in 2018, driven by limited traditional distribution channels to high-consumption zones like Lima and weather-related harvest delays, restricted greater market availability. By 2023, a sharp contraction in export volumes—though small in absolute terms—coincided with lower production, reflecting the sector's exposure to external demand shocks and its dependence on concentrated export markets such as Chile and the United States.

The domestic market absorbed virtually all production throughout the period, with Lima as the primary destination. Efforts to diversify exports faced persistent challenges, including reliance on a single destination and the need for improved logistics and ready-to-eat product presentations to access new markets in Europe.
