The domestic market for duck meat and offal remained stable at around 41 000 t in 2018 and 2019, supported by widespread retail availability and established guidelines for chilled and frozen storage. In 2020, market volume dropped to 36 310 t, a period when product innovations such as single-serve frozen packaging and gluten-free meat options emerged, reflecting shifts in consumer preferences.

Market volume rebounded to 42 155 t in 2021, driven by the expanding use of frozen foods in the food service sector, which boosted demand for frozen duck. However, new mandatory tasks for all catering establishments introduced in July 2022 contributed to a sharp contraction to 24 698 t that year. A partial recovery to 28 419 t occurred in 2023, alongside continued consumer interest in healthier, allergen-free products and greater household readiness for quick-prep frozen items.

By 2025, gastronomic trends emphasized duck meat preparation techniques and quality ingredients, while households showed greater inclination toward stocking durable, quick-prep frozen foods, shaping the consumption landscape.

Hungary's duck meat and offal production rebounded after a two-year decline. In 2021, the country produced 89 640 tonnes, marking a significant increase of 41.5% compared to 2020. Over the 2018-2021 period, overall production decreased by 3.5%, with a compound annual growth rate of 1.2%. The lowest production level was recorded in 2020 at 63 350 tonnes, which also saw the largest decline of 30.3%.

Hungary's duck meat and offal production value recovered following a two-year decrease. In 2021, the output was valued at 329.4 million US dollars, representing a sharp rise of 57.6% from the previous year. From 2018 to 2021, the production value fell by 10.1%, with a compound annual growth rate of 3.5%. The lowest value occurred in 2020 at 209.0 million US dollars, which experienced the largest decline of 27.9%.
