Between 2018 and 2020, the dried egg market in Southern Europe was influenced by a series of governmental support measures for the egg and poultry sector. The Italian Ministry of Agricultural, Food and Forestry Policies implemented exceptional market support measures in late 2018, which were extended through 2019 and renewed in early 2020. During this period, market volume contracted to 4 975 tonnes in 2019 but recovered to 5 380 tonnes in 2020. The recovery coincided with a reported increase in egg imports due to lower product availability, which likely supported the supply of raw materials for dried egg production.
The market experienced a significant contraction in 2021, with volume falling to 4 205 tonnes. A sharp turnaround followed in 2022, as the volume surged by 60% to 6 712 tonnes. This expansion was driven by outbreaks of avian influenza across European farms, which constrained the supply of fresh eggs and pushed prices higher. The resulting market tightness led to increased imports of dried eggs, which reached 10 658 tonnes that year. In 2023, market volume receded to 5 962 tonnes amid continued price increases for eggs, driven by higher production costs and strong demand. Consumer preferences also shifted noticeably towards eggs from alternative farming systems, such as free-range, though this trend primarily affected market structure rather than total volume.
