Between 2018 and 2020, the dried egg market in Southern Europe was influenced by a series of governmental support measures for the egg and poultry sector. The Italian Ministry of Agricultural, Food and Forestry Policies implemented exceptional market support measures in late 2018, which were extended through 2019 and renewed in early 2020. During this period, market volume contracted to 4 975 tonnes in 2019 but recovered to 5 380 tonnes in 2020. The recovery coincided with a reported increase in egg imports due to lower product availability, which likely supported the supply of raw materials for dried egg production.

The market experienced a significant contraction in 2021, with volume falling to 4 205 tonnes. A sharp turnaround followed in 2022, as the volume surged by 60% to 6 712 tonnes. This expansion was driven by outbreaks of avian influenza across European farms, which constrained the supply of fresh eggs and pushed prices higher. The resulting market tightness led to increased imports of dried eggs, which reached 10 658 tonnes that year. In 2023, market volume receded to 5 962 tonnes amid continued price increases for eggs, driven by higher production costs and strong demand. Consumer preferences also shifted noticeably towards eggs from alternative farming systems, such as free-range, though this trend primarily affected market structure rather than total volume.

Southern Europe's dried egg production has declined for the second year in a row. In 2020, the region produced 2,108 tonnes of dried eggs, which represents a slight decrease of 0.8% compared to the previous year. Looking at the period from 2017 to 2020, production fell by 2.2%, with an average annual decline of 0.7%. The highest production level was recorded in 2018 at 2,200 tonnes. The most significant drop occurred in 2019, with a decrease of 3.4%, while the largest increase was seen in 2018 at 2.0%.

In 2020, the value of dried egg production in Southern Europe reached 11,829 thousand US dollars, marking a moderate increase of 4.2% from the year before. Over the 2017-2020 period, however, production value decreased by 3%, with an average annual decline of 1.0%. The lowest value was recorded in 2019 at 11,354 thousand US dollars, while the peak was in 2018 at 14,500 thousand US dollars. The most substantial decline occurred in 2019, falling by 21.7%, whereas the largest increase was in 2018, rising by 18.9%.

Following two years of growth, Southern Europe's dried egg exports declined. In 2020, exports amounted to 5,360 tonnes, reflecting a significant drop of 15.3% compared to the previous year. Between 2017 and 2020, exports overall increased by 37.8%, which translates to an average annual growth rate of 11.3%. The highest export volume was recorded in 2019 at 6,331 tonnes, with the largest increase also occurring that year at 38.3%.

From 2017 to 2020, the export structure for dried eggs in Southern Europe remained fragmented. Germany accounted for 11.6% of exports in volume, the United Kingdom for 11.1%, and France for 9.3%. Together, these three countries represented only 32.0% of total exports, with no single country holding a dominant share.

After two consecutive years of increase, dried egg exports from Southern Europe saw a decline. In 2020, exports reached 30,074 thousand US dollars, down 11.1% from 2019. Over the 2017-2020 period, exports grew by 36.6%, equating to an average annual rate of 11.0%. The peak value was recorded in 2019 at 33,822 thousand US dollars, with the largest increase occurring in 2018 at 37.0%.

Between 2017 and 2020, dried eggs from Southern Europe were exported to a diverse range of markets. Germany accounted for 14.0% of export value, the United Kingdom for 12.7%, and France for 8.2%. Over the 2017-2020 period, imports increased by 4.3%, with an average annual growth rate of 1.4%. The lowest import volume was recorded in 2018 at 8,006 tonnes, while the highest was in 2019 at 9,180 tonnes. The largest increase occurred in 2019, rising by 14.7%.

The import structure for dried eggs in Southern Europe from 2017 to 2020 was dispersed. France accounted for 18.2% of imports in volume, Poland for 15.9%, and the Netherlands for 12.5%. Together, these three countries represented just 46.7% of total imports, with the remaining 53.3% spread across a wide array of other sources.

Following two years of growth, dried egg imports into Southern Europe declined. In 2020, imports totaled 34,704 thousand US dollars, representing a 14.4% decrease from the previous year. The highest import value was recorded in 2019 at 40,539 thousand US dollars, with the largest increase occurring in 2018 at 13.5%.

Over the 2017-2020 period, the value of dried egg imports into Southern Europe was widely dispersed among partner countries. France accounted for 19.2% of import value, Poland for 18.2%, and the Netherlands for 10.8%. Combined, these three countries made up only 48.2% of total import value.
