In 2018, the chicken meat and offal market in Trinidad and Tobago was supported by a robust domestic production base of approximately 800 000 broilers per week, with imports supplementing about 20% of total supply. A key feature was the significant role of wet markets and small cottage processors, which accounted for roughly half of sales, while franchised food service outlets like KFC and McDonald's provided steady demand for local poultry. During this period, companies also expanded into further-processed and convenience foods, indicating a strategic move downstream in the value chain.

Following 2018, the total market volume contracted, falling from 81 585 t in 2018 to 64 598 t in 2020. A gradual recovery began thereafter, with the market reaching 70 089 t in 2022 before moderating to 68 332 t in 2023. Domestic production mirrored this trend, declining from 65 041 t in 2018 to a low of 47 103 t in 2020 and then stabilizing around 50 000 t in the following years.
