The Slovak market for fresh carrots and turnips grew from 27 623 t in 2018 to a peak of 33 226 t in 2019. This expansion was supported by small and medium-sized domestic farms increasing their cultivation areas, with some companies dedicating up to 100 hectares to carrot production. The larger harvests enabled greater supply to retail chains and helped develop the segment for packaged root vegetables.

After 2019, the market volume gradually declined, reaching 30 191 t in 2021. A modest recovery followed in 2022, bringing the market to 31 092 t, before another contraction to 29 645 t in 2023.

By 2024, evolving consumer preferences were influencing the market. Demand was increasingly shaped by a preference for natural, high-fiber foods without preservatives and a strong trend favoring local, traditional products, which bolstered interest in domestically grown carrots and turnips.

The maximum value was recorded in 2018 at 961 thousand US dollars, with the largest increase that year at 289.3%.
