The market volume for baker's wares in Lebanon remained relatively high at around 37 thousand tons in 2018 and 2019, despite the onset of an economic crisis that saw the price of bread double within a year and the Lebanese pound collapse against the dollar, severely reducing purchasing power. This crisis culminated in a sharp contraction of the market to 16.7 thousand tons in 2020.

A partial recovery followed, with the market expanding to 30.3 thousand tons in 2022, largely driven by increased imports. This growth occurred amidst an escalating bread crisis and flour shortages, which likely prompted higher import volumes to meet domestic demand. However, this rebound was reversed in 2023 when the market volume fell to 17.4 thousand tons, as the country experienced one of the world's highest rates of food price inflation, severely constraining consumer spending and import capacity.

Between 2017 and 2020, Iraq, Jordan, and Saudi Arabia were the leading destinations for Lebanon's exports of bread, pastry, cakes, biscuits, and bakers' wares in volume terms. An analysis of Lebanon's import volumes from 2017 to 2020 reveals a broad distribution across multiple markets. Turkey was the largest source with 27.7% of imports, followed by Saudi Arabia at 10.9% and Egypt at 8.1%.
