Between 2018 and 2019, the Colombian beef and buffalo meat market was supported by a growing buffalo segment, where an increase in herd size and slaughter rates contributed to overall production. However, in 2020, the COVID-19 pandemic disrupted supply chains and reduced consumption, leading to a contraction in market volume to 723.5 thousand tons.

The recovery of Colombia's foot-and-mouth disease-free status in October 2020 unlocked export opportunities, driving a sharp increase in beef exports to 52.1 thousand tons in 2021. This export boom, coupled with broader economic recovery and a 14.1% rise in aggregate consumption, supported production despite a modest decline in domestic market volume. By 2022, persistent global inflationary pressures and intensified competition from cheaper proteins like chicken and pork weighed on beef demand, causing a further drop in market volume to 685 thousand tons.

In 2023, the suspension of operations by major player Minerva Foods introduced uncertainty into national production, though increased cattle and buffalo slaughter helped maintain output near 718 thousand tons. The introduction of a health tax on processed meat products from November 2023 affected consumer prices, while a decline in beef prices in 2024 relieved consumer budgets. Concurrently, the lifting of U.S. import restrictions and the sustained expansion of the buffalo meat segment continued to shape market dynamics through the end of the period.
