The market volume for fresh aubergines in Hungary showed considerable movement between 2018 and 2023, starting at 2 026 t. Looking ahead to 2025, a regulatory change redefined the term 'vegetable' to explicitly list all varieties of Solanum melongena (aubergine). This clarification is designed to ease the legal navigation for seed and product distribution in the market. Furthermore, typical seasonal wholesale price patterns were noted, with early-season peaks often falling due to consumer demand.

Aubergine production in Hungary has increased for the second consecutive year. In 2021, Hungary produced 1 060 tonnes of aubergines, which represents a 27.7% increase compared to 2020. Over the period from 2018 to 2021, production grew by 7.1%, translating to an annualized growth rate of 2.3%. The lowest production level was recorded in 2019 at 800 tonnes, which also saw the largest decline of 19.2%.
