The aubergine market in the Americas expanded in 2019, with volume rising to 395 thousand tonnes, supported by a 14.17% increase in U.S. exports and a market surge of over 8% linked to growing consumer demand. This upward trend was sharply interrupted in 2020 when the market volume dropped to 277 thousand tonnes.

A partial recovery followed in 2021, bringing the market to 287 thousand tonnes, coinciding with a slight drop in U.S. export prices to $1.39 per kg which may have encouraged consumption. Despite a 9.1% rise in U.S. production volume in 2022 and sustained consumer interest in health-conscious, fresh produce, the overall market size continued to decline, reaching 258 thousand tonnes in 2022 and 254 thousand tonnes in 2023.

By 2024, U.S. sales of aubergines had grown by 33% compared to 2019, driven by increased home cooking and a strong consumer shift toward fresh, organic, and locally sourced produce. This resurgence was accompanied by a focus on sustainable production practices, including efficient use of resources in greenhouse operations.

In the Americas, aubergine production reached 340.6 thousand tonnes in 2020, marking a significant 15.5% decrease from the previous year. Over the 2017-2020 period, production declined by 13.5%, with a compound annual growth rate of -4.7%. The highest production level was recorded in 2019 at 403.0 thousand tonnes, which saw the largest annual increase of 2.6%.
