Following the pandemic peak, production and market volume gradually declined, returning to near pre-2020 levels by 2023. Throughout this period, the market maintained a strong emphasis on local production and protected origin designations, notably for 'Alho da Graciosa IGP' garlic, while traceability systems and adequate packaging were adopted to guarantee food safety. Import volumes began a steady rise from 2022 onward, reaching 132.0 thousand tonnes by 2025, indicating sustained consumption alongside domestic output.

The lowest value was recorded in 2019 at 65 013 thousand US dollars, which also saw the largest decline of 3.8%. In contrast, 2020 experienced the most significant increase at 29.0%.
