The onset of the COVID-19 pandemic in 2020 further intensified hygiene protocols in production and packaging, while shifting consumer preferences towards health-oriented products helped stabilize the market, which saw a minor contraction to 17 229 thousand US dollars.

Regulatory pressures continued with stricter controls on microbial toxins and metabolites in 2021, supported by state subsidies for microbiological research and innovation. These investments bolstered production capacity, yet domestic market volume grew only marginally to 17 346 thousand US dollars. By 2022, rising consumer health awareness increased demand for yeast-based products, and new labeling rules aimed to improve transparency about microbial ingredients. However, a concurrent strong rise in exports outpaced domestic consumption, pulling the market volume down to 15 795 thousand US dollars.

Market volume rebounded sharply by 25% to 19 741 thousand US dollars in 2023, indicating a significant surge in domestic consumption or inventory changes. This expansion was followed by a pronounced contraction in 2024, with volume falling to 13 982 thousand US dollars. Throughout these two years, production remained at high levels above 50 000 thousand US dollars annually, while export values continued their upward trajectory, exceeding 61 606 thousand US dollars in 2024.

In Hungary, the output value of yeasts, dead microorganisms, and baking powders reached 37 063 thousand US dollars in 2021, representing a 1.8% decline from the previous year. Over the period from 2018 to 2021, production decreased by 2.4%, which translates to an annualized rate of 0.8%. The lowest value was recorded in 2019 at 35 800 thousand US dollars. The most significant drop occurred in 2019 with a 5.8% decrease, while the largest increase was observed in 2020 at 5.4%.

In 2021, the country produced 56 238 tonnes, marking a substantial 24.1% improvement compared to the previous year. From 2018 to 2021, overall production grew by 14%, with a compound annual growth rate of 4.5%. The lowest production volume was recorded in 2020 at 45 323 tonnes, which also saw the largest decline of 7.9% during this period.

After two consecutive years of decline, Hungary's export volumes of yeasts, dead microorganisms, and baking powders showed recovery. In 2021, exports totaled 43 202 tonnes, reflecting a 3.6% increase from the previous year. However, over the broader period from 2018 to 2021, exports decreased by 14.2%, with a compound annual decline rate of 5.0%. The lowest export volume was recorded in 2020 at 41 689 tonnes, while the most significant drop occurred in 2019 with a 10.5% decrease.

Between 2018 and 2021, the primary destinations for Hungary's exports of yeasts, dead microorganisms, and baking powders in volume terms were Romania, Serbia, and Austria. Romania accounted for 22.1% of exports, Serbia for 17.2%, and Austria for 16.6%. Together, these three countries represented 55.8% of Hungary's total export flows during this period.

The market base for Hungary's exports in value terms from 2018 to 2021 was relatively diversified. Romania accounted for 20.1% of export value, Serbia for 13.9%, and Austria for 11.9%. Combined, these three countries represented 46.0% of total export flows, while the remaining 54.0% was distributed among numerous other trading partners.

The lowest import volume was recorded in 2020 at 10 879 tonnes, while the most substantial decrease occurred in 2019 with a 22.9% drop.
