The market volume for yautia in Central America fluctuated significantly between 2018 and 2023. After starting at 119 thousand tonnes in 2018, it dropped to 105.2 thousand tonnes in 2019. The year 2020 saw a sharp recovery to 145.7 thousand tonnes, marking the highest point in the period. However, this was followed by a gradual contraction over the next three years, with the market shrinking to 142.1 thousand tonnes in 2021, 120.8 thousand tonnes in 2022, and finally 82.3 thousand tonnes in 2023.

Production movements largely drove these changes, as imports were negligible. Output fell from 140.2 thousand tonnes in 2018 to 122.5 thousand tonnes in 2019, then jumped to 174.5 thousand tonnes in 2020. After 2020, production trended downward, reaching 110.1 thousand tonnes in 2023. Exports, while substantial, remained relatively stable, averaging around 23 thousand tonnes per year, with a peak of 28.8 thousand tonnes in 2020.

By 2024, the export market for yautia remained active, with Veracruz in Mexico being a major hub shipping to the United States, Canada, and Spain. Demand from Caribbean markets and Hispanic communities in the U.S. continued to support export flows. However, production in Central America faces constraints due to demanding climate and soil requirements, which limit supply and keep prices high, affecting overall market volume.
