High inflation and soaring food prices, exacerbated by the war in Ukraine, led consumers to shift away from premium organic products toward more affordable conventional flour, supporting the rebound in demand and production.

Continued inflationary pressures drove the market's value up to $2.3 billion in 2023, even as producer prices for agricultural goods began to soften. By 2024, the market moderated, with volume settling at 4.8 million tons and value decreasing to $2.0 billion, reflecting a stabilization after the earlier price-driven volatility.
