From 2018 to 2021, the South American virgin olive oil market volume grew from 97 660 t to 128 910 t. This expansion was supported by a 27% drop in Mediterranean harvests in 2020, which tightened global supply and increased reliance on imports and local output. Concurrently, rising consumer preference for high-quality and organic extra virgin oils boosted premium segment demand throughout the period.

A sharp reversal occurred in 2022 as market volume plummeted to 48 420 t. Severe droughts in Andalusia cut olive yields by more than half, driving world prices to record highs and drastically reducing imports into the region. New EU labeling and quality‑control rules further complicated international trade. Meanwhile, Brazil significantly scaled up its own production, notably in Rio Grande do Sul, helping to cushion the decline in overall output.

In 2023 the market contracted further to 29 210 t, as imports remained minimal due to persistent global price pressures and tighter regulatory requirements on quality and labeling. Fiscal incentives for local industry in Brazil supported domestic producers, stabilizing production around 56 500 t.

South America's production of virgin olive oil and fractions has increased for the second year in a row. In 2020, the region produced 52 991 tonnes, marking a 2.5% gain over 2019. However, looking at the broader period from 2017 to 2020, production actually fell by 21.6%, which translates to an average annual decline of 7.8%. The lowest point was in 2018, with output dropping to 51 100 tonnes, and that year also saw the sharpest decrease of 24.4%.

South America's exports of virgin olive oil and fractions in volume terms reached 27 323 tonnes in 2020, representing a significant drop of 12.1% compared to 2019. From 2017 to 2020, exports decreased by 29.2%, averaging an annual decline of 10.9%. The lowest export volume was recorded in 2018 at 21 963 tonnes, which also saw the largest decline of 43.1%. In contrast, 2019 experienced the biggest increase of 41.5%.

Between 2017 and 2020, the United States, Spain, and Canada were the key destinations for South America's exports of virgin olive oil and fractions in volume terms.
