During this period, manufacturers responded by introducing vegetarian and vegan products, removing meat broths and using spices to diversify flavors, which stimulated demand within the growing segment of fresh, frozen, and innovative prepared soups.

Market volume then contracted over the next two years, falling to 52.0 thousand tons by 2021. A recovery began in 2022, with volume rising to 71.6 thousand tons as consumer preferences shifted decisively toward prepared soups for their convenience and perceived health benefits; that year, 81% of Italians reportedly chose ready-made soups, favoring frozen and low-calorie options over traditional recipes.

Following a minor dip to 67.8 thousand tons in 2023, the market surged to a new high of 110.2 thousand tons in 2024, reflecting a significant expansion in overall consumption.

From 2017 to 2020, the United Kingdom, France, and Spain were the largest buyers of Italian soups and broths by volume. The United Kingdom accounted for 28.5% of exports, France for 15.8%, and Spain for 12.3%, together making up 56.6% of total export volumes.

Over the 2017-2020 period, imports decreased by 32.5%, with an average annual decline of 12.3%. The highest volume was recorded in 2018 at 30 301 tonnes, which also saw the largest annual increase of 20.8%. The most significant drop occurred in 2019, with a 44.0% decrease.
