Between 2019 and 2020, the German smoked trout market expanded, with volume rising from 29.4 thousand tonnes to 30.7 thousand tonnes and value increasing from $347 million to $377 million. This growth period was followed by a consistent contraction from 2021 onward.

The market decline coincided with regulatory and cost pressures. In 2022, an increase in the national minimum wage to €12 raised production costs across the food sector, while new Eco Schemes and conditionality rules in agriculture added operational complexity. Simultaneously, tightened food safety and hygiene requirements for smoked trout, a perishable product requiring a use-by date, imposed additional compliance burdens on processors.

Consumer preferences for high-quality, sustainably sourced food remained a supportive factor, with continued willingness to spend on good nutrition and appreciation for traditional beechwood smoking techniques. However, these trends were insufficient to offset the broader market contraction, which saw volume fall to 19.5 thousand tonnes by 2024.

Germany's smoked trout exports grew for the second consecutive year. In 2020, shipments abroad reached 1,690 tonnes, a sharp rise of 30.7% from 2019. Over the 2017-2020 period, exports increased by 49.7%, with a compound annual growth rate of 14.4%. The lowest volume was recorded in 2018 at 1,044 tonnes, which also saw the largest decline of 7.5%.

From 2017 to 2020, Austria, Switzerland, and Belgium were the primary destinations for Germany's smoked trout exports by volume, accounting for 39.0%, 14.0%, and 11.7% of total shipments, respectively. Together, these three countries represented 64.8% of all export flows.

Germany's smoked trout export value rose for the third year in a row. In 2020, exports amounted to 28.4 million US dollars, a substantial increase of 38.0% over 2019. Between 2017 and 2020, export value grew by 61.6%, equivalent to an annualized rate of 17.3%.

Germany's smoked trout import value continued to rise for the third straight year. In 2020, imports reached 295.9 million US dollars, an increase of 10.8% compared to the prior year. Between 2017 and 2020, import value surged by 71.4%, translating to an annualized growth rate of 19.7%.
