Between 2018 and 2020, the Mongolian sheep and goat meat market volume grew from 466.5 thousand tonnes to 684.3 thousand tonnes. This expansion was driven by rising domestic consumer demand for organic and locally sourced meat, alongside increased public-private partnerships to improve production efficiency. In 2020, despite pandemic-related disruptions to export logistics, internal demand remained stable, and new programs to increase output of heat-treated meat began to be implemented.

Market volume fell sharply to 479.8 thousand tonnes in 2021, then recovered to 617.8 thousand tonnes in 2022. The rebound was supported by government measures to stabilize meat supplies and prices, coupled with the start of heat-treated meat exports to new Middle Eastern markets, including the UAE, Kuwait, and Saudi Arabia.

In 2023, the market size decreased to 557.9 thousand tonnes, while exports rose to 12.6 thousand tonnes, indicating a greater orientation toward external sales.
