The rise in market value significantly outpaced the volume growth, suggesting a shift in product mix, pricing dynamics, or consumer preferences toward higher-value offerings within the category. Notably, the value contraction in 2020 was less pronounced than the physical volume drop, indicating a degree of price stability or premiumization even during the downturn.

Domestic production and imports both contributed to the market's expansion over the full period. While production volumes fluctuated, imports showed a consistent upward trend, growing from 4.6 thousand tons to nearly 7 thousand tons. Concurrently, exports more than doubled in value from $1.9 million to $3.5 million, indicating that the domestic industry was not only supplying the local market but also gaining traction in international sales.

After two consecutive years of expansion, North Macedonia's production of sauces, condiments, seasonings, and mustard declined in volume. In 2020, the country produced 3 171 tonnes, marking a sharp 50.6% drop from 2019. From 2017 to 2020, production decreased by 46.1%, with a compound annual growth rate of 18.6%.
