The Danish rennet and concentrates market volume fluctuated in the early years, dropping to 2 773 t in 2019 before recovering to 5 709 t by 2021. From 2022 onwards, market volume entered a phase of rapid expansion, reaching 23 322 t in 2024. This growth was driven by a surge in imports, which rose from 3 639 t in 2021 to 21 708 t in 2024, while domestic production remained relatively steady around 8 000-8 200 t.

In value terms, the market peaked at $30.5 million in 2021 but then declined steadily to $17.7 million by 2024, despite the substantial increase in physical volume. This divergence suggests a shift towards lower-priced products or increased competitive pressure affecting average prices. Exports also grew over the period, from 5 957 t in 2018 to 6 643 t in 2024, but were overshadowed by the import surge.

The period from 2018 to 2024 thus saw the market transform from a net exporter to one increasingly supplied by imports, with total available volume multiplying more than sixfold. The stable production base indicates that domestic output did not keep pace with the expanding domestic consumption, leading to greater reliance on foreign sources.
