The Guatemalan pig offal market experienced a gradual contraction from 2018 to 2021, with its total volume decreasing from 4 013 t to 3 733 t. This period was marked by a consistent decline in domestic production, which fell from 3 667 t to 3 180 t, while import levels showed some fluctuation.

A reversal began in 2022 as the market volume grew to 4 315 t and continued its ascent to 4 839 t in 2023. The initial recovery was facilitated by streamlined trade procedures, notably the launch of an electronic phytosanitary certificate exchange system with Peru, which reduced logistical costs and delays for agricultural shipments. Concurrently, the market's underlying potential for expansion, underscored by Guatemala having the lowest per capita pork consumption in Central America, supported increased demand, aided by accessible pricing from key suppliers like the United States.

This positive momentum carried into 2023, with domestic production rising significantly to 4 196 t and imports continuing their upward trend, solidifying a period of sustained market growth.

The most significant drop occurred in 2019 with a 6.6% decrease, while the largest increase was seen in 2018 at 2.6%.

In 2020, the output was valued at 2 877 thousand US dollars, representing a sharp 34.1% decline compared to 2019. The peak value was reached in 2019 at 4 366 thousand US dollars, which also saw the largest increase of 13.9%.
