Between 2018 and 2024, the market volume for odoriferous substances in the Netherlands contracted sharply from 58 349 t to 25 579 t. This decline of more than half was marked by a steep fall in 2020 and 2021, a partial rebound in 2022, and a renewed drop thereafter.

The market shrinkage was driven by a consistent downward trend in domestic production, which fell from 66 145 t to 40 585 t, coupled with strong growth in exports, which rose from 33 832 t to 45 436 t. Although imports showed volatility and peaked at 51 793 t in 2022, they could not compensate for the combined effect of lower production and higher outbound shipments.

The temporary market recovery in 2022, when volume reached 41 267 t, was entirely due to a surge in imports. In subsequent years, as exports climbed further and production continued to decline, the market resumed its contraction, reaching the lowest point of the period in 2024.

Production of odoriferous substances for food and drink in the Netherlands declined for the second consecutive year. In 2021, the country produced 42 972 tonnes, marking a significant year-on-year decrease of 14.2%. Over the period from 2018 to 2021, production fell by 35%, with a compound annual growth rate of -13.4%. The highest production level was recorded in 2019 at 66 711 tonnes. The largest annual decline occurred in 2020, with a drop of 24.9%, while the smallest change was a modest increase of 0.9% in 2019.

Exports of odoriferous substances for food and drink from the Netherlands increased for the third consecutive year. In 2021, exports reached 43 820 tonnes, up 17.7% from the previous year. Between 2018 and 2021, exports grew by 29.5%, equivalent to an annualized rate of 9.0%.

From 2018 to 2021, exports of odoriferous substances for food and drink from the Netherlands were distributed across numerous countries. France accounted for 8.7% of exports in kind, Germany for 6.6%, and the United Kingdom for 6.3%. Together, these three countries represented just 21.5% of total export flows, indicating a broad geographic spread.

In 2021, export value amounted to 649.1 million US dollars, a 20.2% rise compared to 2020. Between 2018 and 2021, exports grew by 25.2%, equating to an annualized rate of 7.8%. The lowest value was recorded in 2019 at 504.1 million US dollars, with the largest annual decline of 2.8% also occurring that year.

From 2018 to 2021, France, the United Kingdom, and Germany were the largest buyers of odoriferous substances for food and drink from the Netherlands in value terms. France accounted for 10.4% of exports, the United Kingdom for 9.1%, and Germany for 7.4%. However, their combined share was only 26.9% of total export value, reflecting a highly diversified country structure.

In 2021, imports were recorded at 31 848 tonnes, a 15.0% increase compared to 2020. Between 2018 and 2021, imports grew by 22.3%, equivalent to an annualized rate of 6.9%. The lowest import volume was in 2019 at 24 838 tonnes, with the largest annual decline of 4.6% also occurring that year.

From 2018 to 2021, Germany, Ireland, and Belgium consistently served as the main sources for imports of odoriferous substances for food and drink into the Netherlands in kind. The lowest value was recorded in 2020 at 367.9 million US dollars, while the largest annual decline of 6.2% occurred in 2019.
