The maize starch market in Denmark saw volume grow from 10.9 thousand tonnes in 2018 to 13.0 thousand tonnes in 2022, while market value increased from USD 7.7 million to USD 12.7 million. This period of expansion occurred alongside improvements in maize productivity, such as higher yields in 2019, and the introduction of major climate policies including the National Climate Law and Green Tripartite Agreement in 2020.

A sharp reversal followed in 2023, with market volume dropping to 6.3 thousand tonnes and further to 6.1 thousand tonnes in 2024. The decline was driven by a multi-year decrease in maize starch consumption across Europe and climate extremes from 2022 to 2024 that reduced EU maize yields by 10-15%, tightening raw material supply and affecting prices.

Despite the market contraction, the starch industry witnessed significant activity. KMC announced major capacity investments and a new food innovation center in Denmark in 2023, Cargill and AKV Langholt planned a new potato starch production facility in 2024, and KMC launched CheeseMaker CF66, a novel potato starch for plant-based cheese, in 2025.
