The Austrian market for lard and poultry fats expanded consistently from 65 377 tons in 2018 to 68 183 tons in 2023. Growth was gradual each year, with only a minor contraction in 2022 when volume dipped to 67 344 tons.

By 2024, several industry trends gained prominence. The use of poultry fat for biodiesel surged, with EU-wide volumes rising 54% between 2022 and 2024 to over 1.4 million tons annually. Refining advances also improved fat purity, making it more suitable for food applications. Furthermore, rising poultry meat production in the EU supported raw material availability, while consumer shifts toward poultry for cost and nutritional reasons indirectly boosted fat demand.

Austria's production of lard and poultry fats grew for the third consecutive year. In 2020, the country produced 73 000 tonnes, marking a slight increase of 1.0% compared to 2019. Over the 2017-2020 period, production rose by 3.4%, with an average annual growth rate of 1.1%.
