From 2018 to 2023, the dried mushrooms market in North Macedonia experienced substantial volatility. Starting at 220 tonnes in 2018, the market volume contracted sharply to 84 tonnes by 2020, before recovering to 215 tonnes in 2023. This dramatic swing was primarily driven by fluctuating export volumes, which heavily influenced domestic availability.

Domestic production showed consistent growth throughout the period, rising from 232 tonnes in 2018 to 310 tonnes in 2023. However, a surge in exports, which jumped from 16 tonnes in 2018 to a peak of 189 tonnes in 2020, diverted a large share of production abroad and shrank the local market. The subsequent easing of exports to 106 tonnes in 2023 allowed the domestic market volume to rebound significantly.

After two years of growth, North Macedonia's dried mushroom production volume declined. In 2020, the country produced 0.3 thousand tonnes of dried mushrooms, marking a decrease of 0.7% compared to the previous year. Over the period from 2017 to 2020, production increased by 23.3%, which translates to an annualized growth rate of 7.2%. The highest production level was recorded in 2019 at 0.3 thousand tonnes, while the largest annual increase occurred in 2018 with a rise of 13.1%.

Dried mushroom exports from North Macedonia increased for the third consecutive year. In 2020, the country exported 188.9 tonnes of dried mushrooms, up by 28.2% from the previous year. From 2017 to 2020, exports surged by 1 700.3%, with a compound annual growth rate (CAGR) of 162.1%.

Between 2017 and 2020, Italy, France, and Bosnia and Herzegovina were the leading destinations for North Macedonia's dried mushroom exports in volume terms. Italy accounted for 67.6% of exports, followed by France at 6.9% and Bosnia and Herzegovina at 6.2%. Together, these three countries represented 80.6% of total export flows.
