The market rebounded in 2021 to 41 045 t, driven by increased demand for organic food in retail channels due to the COVID-19 pandemic. This shift, coupled with a consumer focus on health, also pushed the market value significantly higher. In 2022, the volume stabilized around 40 344 t as retail sales of organic cucumbers slightly declined, while continued price inflation for fresh vegetables affected consumer spending.

By 2023, the market volume contracted to 37 842 t, yet its value rose to 91.2 million USD, indicating sustained high price levels and a possible ongoing consumer shift towards premium organic produce.
