The market volume for fresh carrots and turnips in Hungary showed considerable volatility from 2018 to 2023, expanding from 70 494 tonnes to a peak of 101 306 tonnes in 2021 before contracting sharply to 74 097 tonnes the following year. A partial recovery to 80 020 tonnes occurred in 2023.

This movement was closely tied to domestic production, which followed a similar pattern, reaching 96 410 tonnes in 2021 before declining. Import volumes generally decreased until 2021 but then surged by 51% to 11 290 tonnes in 2023, while export levels fluctuated significantly each year.

By 2024, specific industry factors came into focus. A severe drought in 2022 had reduced cultivation area for carrots, impacting subsequent output. Persistent constraints in storage capacity and the escalating effects of climate change required adaptations in farming techniques. Concurrently, Hungary became a net importer, influenced by an oversupply from Dutch producers who actively sought Central European markets. The domestic organic carrot segment remained stable, with a growing emphasis on sustainable practices among growers.

In 2021, Hungary produced 96.4 thousand tons of carrots and turnips, marking a robust 21.7% increase compared to 2020. Looking back to 2019, production saw its largest annual rise at 26.6%, while 2020 experienced the biggest decline of 4.5%. Over the period from 2018 to 2021, overall production grew by 47.2%, which translates to an average annual growth rate of 13.7%.

In 2021, the value of carrot and turnip production in Hungary reached 48 409 thousand US dollars, showing a dramatic 45.2% gain from the previous year. The highest value was recorded in 2019 at 49 592 thousand US dollars, while the lowest was in 2020 at 33 348 thousand US dollars. That year also saw the largest decline in value, dropping by 32.8%. From 2018 to 2021, production value increased by 23.5%, averaging a 7.3% annual growth rate.
