The cabbage market in Canada grew from 278.1 thousand tons in 2018 to a peak of 298.2 thousand tons in 2021, then sharply contracted to 202.4 thousand tons in 2023. In value terms, the market reached $433.7 million USD in 2021 but fell to $301.6 million USD in 2023. Imports, which constituted a significant part of the market, dropped sharply after 2021, becoming the main driver of the overall volume reduction.

The drop in production to 161.6 thousand tons in 2023 was driven by difficult wet growing conditions in Eastern Canada, which damaged vegetable crops including cabbages. Simultaneously, an oversupply in the Quebec and U.S. markets led to price declines, particularly affecting small producers.

In 2024, vegetable production in Canada recovered, with a 2.5% increase compared to 2023, including growth in cabbage output. However, prices remained low due to abundant supply in the North American market. In Quebec, consumers showed renewed interest in cabbage for its affordability and culinary versatility.
