From 2018 to 2020, Ghana's aubergine market volume remained stable, hovering around 51 400 metric tons annually. During this period, international demand for Ghanaian aubergines grew significantly, with exports surging by 437.5% between 2017 and 2019, reaching key markets like Canada, the United Kingdom, and the United States. While export prices dropped sharply in 2020, indicating broader market disruptions, domestic production and market size were largely unaffected.

The market expanded notably in 2021, with production rising to 53 713 metric tons and market volume increasing by 4.35% to 53 643 metric tons. This growth was supported by the implementation of the Ghana Agricultural Investment Plan (2018-2021), which included irrigation development projects to bolster vegetable production. Concurrently, rising health consciousness and an expanding middle-income population began driving higher domestic consumption of fresh produce like aubergines.

After the 2021 peak, market volume experienced slight declines in 2022 and 2023, settling at 52 773 metric tons. This dip occurred despite a third consecutive year of rising exports, reaching 155 metric tons in 2023. Post-harvest losses, linked to persistent challenges in cold storage and transportation infrastructure, limited the volume available for the domestic market. In response, both government and private sector initiatives accelerated, such as investments in solar-powered cold rooms and the launch of the Ghana Green Finance Facility in 2024, aiming to improve supply chain efficiency and support farmers.
