The market for alliaceous vegetables in Czechia expanded from 123.8 thousand tons in 2018 to 128.4 thousand tons in 2023, with a peak of 131.6 thousand tons in 2020. This growth was initially supported by rising consumer preference for locally grown and organic produce, which stimulated new entrants and encouraged domestic production. The COVID-19 pandemic further increased demand for immune-supporting foods like garlic in 2020.

Market volume declined to 119.0 thousand tons in 2022, mainly due to a sharp rise in prices that reduced fresh vegetable consumption by about a tenth. Legislative updates, such as the replacement of decree 157/2003 with decree 397/2021 setting new requirements for preserved alliaceous vegetables, and ongoing EU rules on organic seedlings, shaped production practices throughout the period. Steady consumer interest in fresh, local vegetables continued to support direct sales channels and farm markets.

Czechia's production of alliaceous vegetables grew for the second year in a row. In 2020, the country produced 55 360 tonnes, marking a 19.3% increase from the previous year. Looking at the period from 2017 to 2020, production rose by 30%, which translates to an average annual growth rate of 9.1%. The lowest production level was recorded in 2018 at 38 520 tonnes, when output fell by 9.5%. The most significant growth occurred in 2019, with a 20.5% increase.
