Ukraine Faces Quality Potato Shortage as Winter Prices May Rise 25–40%

Ukraine may face a shortage of marketable potatoes in the second half of the 2026/27 season as weather damage and storage losses reduce quality supplies. Prices are forecast to rise by 25–40% from December to February, with the tightest availability expected in spring 2027.

Harvest volume masks uneven field results

Ukraine could face a shortage of quality marketable potatoes during the second half of the 2026/27 season, even if the overall harvest provides sufficient volumes in early autumn. Kateryna Zvierieva, development director at the Ukrainian Horticultural Association and head of the EastFruit information and analytics platform, said the main concern is not the complete absence of potatoes but the availability of particular varieties and sizes that retain commercial quality.

TrueUA reported that a final assessment of the 2026 crop was not yet possible because the mass harvesting of medium and late varieties was continuing. Weather conditions have nevertheless created substantial risks. According to Zvierieva, Ukraine’s Institute of Potato Growing recorded losses of about 7 tonnes per hectare even on irrigated land after six days of temperature stress.

The damage has not been uniform across the country. Irrigated farms using suitable varieties, high-quality seed and effective crop management may still achieve acceptable results. That makes a nationwide loss estimate less useful than an assessment of regional yields, quality and each producer’s ability to preserve the crop after harvest.

Storage becomes the decisive constraint

Large volumes of newly harvested potatoes are expected to keep the market relatively stable in September and the first half of October. The supply picture could begin to deteriorate in late autumn as produce from farms without adequate storage facilities disappears from the market and losses accumulate in warehouses.

Novyny.Live similarly reported that the central risk is not the quantity lifted from fields but the share that retains its characteristics during long-term storage. The reduction in quality vegetable supply is expected to become visible at the end of 2026 and the beginning of 2027. Zvierieva expects the shortage of marketable potatoes of certain sizes and varieties to become especially pronounced in spring 2027.

Storage capacity and handling standards will therefore determine which growers can sell later in the season, when supplies are tighter. Producers with temperature-controlled facilities may be better positioned to preserve quality and capture higher winter prices. Farms lacking suitable storage face a greater risk of spoilage or pressure to sell during the autumn harvest, when supply is abundant.

Winter prices forecast to increase by up to 40%

Potato prices are forecast to rise by approximately 25–40% between December and February compared with autumn levels. Novyny.Live said the increase would reflect stronger seasonal demand and declining crop inventories. Several days before its report, Ukrainian agricultural producers were selling potatoes at 6–12 hryvnias per kilogram, while demand in that segment remained below average.

The projected increase would affect household food budgets because potatoes are a staple product in Ukraine. It would also widen the seasonal difference between prices received during the harvest and those available to businesses capable of holding commercial-grade stocks through winter.

The outlook concerns quality and timing rather than an immediate nationwide food shortage. Agriculture and Food Minister Taras Vysotskyi recently said Ukraine had not recorded a food deficit following the destruction of individual distribution centres in Russian attacks. He added that up to 40% of the lost capacity could be replaced or restored relatively quickly. For the potato market, however, the decisive issue will be how much of the uneven 2026 harvest remains suitable for sale through winter and into spring.
